🥪 Creamy Egg Sandwich Spread with Mayonnaise




✅ Ingredients (for 2–3 sandwiches):

  • 4 hard-boiled eggs

  • 3 tbsp mayonnaise (adjust to taste)

  • 1 tsp mustard (optional, for a little tang)

  • Salt to taste (about ¼ tsp)

  • Freshly ground black pepper (to taste)

  • 1 tbsp finely chopped onions or scallions (optional)

  • 1 tbsp chopped fresh parsley or chives (optional)

  • ½ tsp paprika or chili flakes (optional, for flavor)


👩‍🍳 Instructions:

  1. Boil the eggs

    • Place eggs in a saucepan and cover with cold water.

    • Bring to a boil, then simmer for 9–10 minutes.

    • Transfer to cold water, peel once cool.

  2. Mash the eggs

    • In a mixing bowl, mash the eggs with a fork or potato masher until slightly chunky.

  3. Add the creamy mix

    • Mix in mayonnaise, mustard (if using), salt, and pepper.

    • Stir in onions/scallions and herbs if using.

  4. Adjust to taste

    • Taste and adjust seasoning or mayo for creaminess.

  5. Chill (optional)

    • For best flavor, chill the spread in the fridge for 15–20 minutes before serving.


🥯 To Serve:

  • Spread on toasted bread, croissants, or bagels.

  • Add lettuce, cucumber, or tomato for crunch.

  • Use as a dip with crackers too!
