🌾 Arabic Harees (Hareesa) Recipe
📝 Ingredients:

1 cup whole wheat (cracked wheat or harees wheat)

500g meat (usually lamb, chicken, or beef — boneless is easier)

8 cups water

1 tsp salt (adjust to taste)

1/2 tsp ground black pepper (optional)

2 tbsp ghee or butter (for serving)

Ground cinnamon or cardamom (optional, for flavoring)
🍳 Instructions:
1. Prepare the Wheat:

Rinse the wheat thoroughly, then soak in water for 4-6 hours or overnight.

Drain before cooking.
2. Cook the Meat:

In a large pot, add the meat, soaked wheat, salt, and water.

Bring to a boil. Skim off any foam.

Lower the heat and simmer for 2–3 hours, stirring occasionally.
Tip: A pressure cooker can reduce cooking time to about 45 minutes.
3. Mash the Mixture:

Once the meat and wheat are fully cooked and tender:

Use a wooden spoon or immersion blender to mash everything into a smooth, porridge-like consistency.

Traditionally, it should be thick but smooth with a soft texture.

4. Flavoring:

Add black pepper (optional).

Spoon into bowls and drizzle with ghee or butter.
