🍗 Italian Chicken in Tomato Herb Sauce

🧂 Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)

  • Salt and black pepper to taste

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 can (14 oz) crushed tomatoes

  • 1 tbsp tomato paste (optional for deeper flavor)

  • 1 tsp dried oregano

  • 1 tsp dried basil (or a few fresh basil leaves)

  • ½ tsp red pepper flakes (optional for a little heat)

  • ½ cup chicken broth or dry white wine

  • Fresh parsley or basil for garnish

  • Freshly grated Parmesan cheese (optional)


🍳 Instructions:

  1. Season the Chicken
    Pat chicken dry and season both sides with salt and pepper.

  2. Sear the Chicken
    Heat olive oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside.

  3. Sauté Aromatics
    In the same pan, reduce heat to medium. Add garlic and onion. Sauté until translucent and fragrant (about 2–3 minutes).

  4. Make the Sauce
    Stir in crushed tomatoes, tomato paste, oregano, basil, and red pepper flakes. Pour in broth or wine. Stir and bring to a simmer.

  5. Simmer Chicken
    Return chicken to the pan, cover, and simmer for 15–20 minutes until chicken is cooked through and sauce thickens. Flip halfway if needed.

  6. Serve
    Garnish with fresh parsley or basil. Optional: Top with grated Parmesan. Serve with pasta, rice, or crusty bread.


🍷 Suggested Pairing:

A glass of Chianti or Pinot Grigio, and a side salad with balsamic vinaigrette.
