🍗 Italian Chicken in Tomato Herb Sauce
🧂 Ingredients:

4 boneless, skinless chicken breasts (or thighs)

Salt and black pepper to taste

2 tbsp olive oil

4 cloves garlic, minced

1 small onion, finely chopped
-
1 can (14 oz) crushed tomatoes
-
1 tbsp tomato paste (optional for deeper flavor)

1 tsp dried oregano
-
1 tsp dried basil (or a few fresh basil leaves)
-
½ tsp red pepper flakes (optional for a little heat)

½ cup chicken broth or dry white wine
-
Fresh parsley or basil for garnish

Freshly grated Parmesan cheese (optional)
🍳 Instructions:

Season the Chicken
Pat chicken dry and season both sides with salt and pepper. -
Sear the Chicken
Heat olive oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside. -
Sauté Aromatics
In the same pan, reduce heat to medium. Add garlic and onion. Sauté until translucent and fragrant (about 2–3 minutes). -
Make the Sauce
Stir in crushed tomatoes, tomato paste, oregano, basil, and red pepper flakes. Pour in broth or wine. Stir and bring to a simmer. -
Simmer Chicken
Return chicken to the pan, cover, and simmer for 15–20 minutes until chicken is cooked through and sauce thickens. Flip halfway if needed. -
Serve
Garnish with fresh parsley or basil. Optional: Top with grated Parmesan. Serve with pasta, rice, or crusty bread.
